Produced from Cristalline sugar cane in Saint-Michel de l’Attalaye by Michel Sajous, an iconic clairin producer, the Vieux Sajous 5 years releases follow a project that is unprecedented in the history of clairin: ageing Haitian cane eaux-de-vie in a wide variety of casks to explore their incredible potential for future evolution.
This initiative proved successful, leading Spirit of Haiti to go one step further by extending the ageing of the clairins in a tropical climate for several years, giving rise to the ‘Vieux’ editions, of which Vieux Sajous is undoubtedly one of the most accomplished.
This bottling is the 3rd edition of Vieux Sajous 5 years, a continuation of the 2017 and 2018 vintages.
